Veganism in IndiaIt is estimated that 25% – 35% of Indians are lacto-vegetarian. Still many people in the india do not know the difference between vegan and vegetarian. But it is changing. Many vegan organizations are making great advances educating people on environmental issues and health conditions such as diabetes and heart disease that used to be very rare in India and are becoming endemic among the middle-upper class. This might be related to the fact, that India is one of the world’s leading dairy consumers.
Traditionally, in India, “pure vegetarian” refers to people who are lacto-vegetarians (they do not eat eggs).
Use the term as it’s a great way to explain what you want: just say that you are “pure veg, without any dairy” (ghee, cream, paneer) and everybody should usually understand. Since almost everyone speaks English, at least in the cities, you should have no problem asking. Digging into the mouthwatering food is part of the fun while in India, and it’s an experience not to be missed.
However, there are a few rules to be mindful of when eating. Be sure the food is thoroughly cooked, and that it hasn’t been sitting out in the open for a long time. Boiling-hot food is best. Avoid fresh produce that may have been washed in unclean water and do not drink tap water or drinks with ice that you suspect have been prepared with non-filtered water. If going for street food, stick to vendors that have lines. Wash hands thoroughly, much more often than you would normally. With these precautions you should be completely fine and, on your way to enjoying one of the best countries in the world for foods.
The cuisine varies from North to South (see LOCAL FOOD page), with the South preparing more coconut based dishes and eating rice as a staple and with the North adding cream for richer dishes and using breads as chapati and naan as staples.
Food is relatively cheap. You will be able to eat the most amazing and intricate dishes for around or even less than $1, particularly on the street. In restaurants, you can order an exquisitely delectable vegetarian thali – a platter offering a variety of Indian dishes (anywhere between 6 and 20) for $2 or even less. In some cases, thalis are refillable at no extra cost. Again, remember to ask for oil as opposed to ghee-based dishes and skip the curd (yogurt) usually served along with your tray.
Many of the Indian dishes are made with clarified butter called ghee. To be on the safe side, always inquire as to whether the dish you’re ordering is made with ghee, and if it is, ask them to substitute vegetable oil instead. People in India will always be happy to cater to that request whenever they can. That being many times waiters will nod their head in agreement, or even say “yes” to your requests, without fully understanding them.

Wheat crispy deep fried hollow little balls, filled with potato and onion with spiced tamarind sauce and coriander
Puffed deep fried indian bread (puri) with spicy potato (aloo) -tomato gravy
Traditional lentil stew with turmeric, cumin, garlic, chili among other spices. Make sure: no ghee is used
Deep fried vegetables dipped in lentil flour and cooked until crispy
Aloo (potato), Gobi (cauliflower) with local blend of masala spices
Fried or baked wheat dough filled with spiced potatoes, onions and/or peas
A deep fried roll made fermented urad beans batter, can include potatoes, chickpea, onion, curry leaves, chili, ginger and more
Wheat steamed dumplings. Filled with various vegetables such as cabbage, mushroom, spinach, carrots, potato and cilantro
Kebabs – Made of combination of spinach, green peas and potatoes or soya and masala spices
Flattened rice made with vegetables and a mix of local spices, commonly eaten as a breakfast dish
Red kidney bean stew with tomatoes, onions and local spices. Make sure: no ghee is used

Chaat (snack) made of cucumber, tomatoes, coriander, with puffed rice boiled potato and a tamarind chutney drizzled on top
Made of mashed potatoes mustard oil, garlic cloves, red chilli and roasted onions. Makes sure: No eggs on top for garnishing
Lightly fried/baked eggplants with masala spices
Snack made of peanuts/ sesame/ almonds and jaggery (coconut sugar)
Candy made of ash gourd or white pumpkin, lime juice and sugar
Dishes that are not vegan by default, but can be made so, by asking to remove or change part of the ingredients.
Rice with peas, carrots, green beans and cinnamon spices. To Veganize: Ask to have it made with oil and not ghee
Chickpea stew with tomatoes, with masala spices. To veganize: ask to be made with oil instead of ghee
Fermented rice and lentil batter crepe, filled with spiced potatoes, coconut chutney. To veganize: ask for no ghee
Wheat dough with choices of veg. fillings. To veganize: ask to be made with oil instead of ghee
Potatoes, peppers, cauliflower, green beans,peas, with spices. To veganize: Ask with oil instead of ghee
A stew made of rice, lentils, tomato, onion with turmeric and cumin spices
Dishes that might look vegan, but contain animal products.

In the city and Cows (holy animals in India) wander the city, often skinny and surviving on garbage from the streets. As they eat, they ingest many plastic bags, which can eventually kill them. Bulls pulling carts are commonly used for transportation and carrying loads. In some areas, especially near slums, packs of stray hungry dogs wander the streets. They can be dangerous as a pack, otherwise usually inoffensive.
In theDonkeys carry loads. Bullock carts are common in the villages for personal family use.
Buffaloes and cows are used for agriculture in farming, compost-churning and for producing milk. It is not rare for a farmer to possess a cow and keep it tied up in his yard.
Goats in packs wander the roads. They usually belong to someone, though there is often no one seen watching over them.
We have not included the treatment of animals in the meat/fur/leather industries, zoos or circuses, animal testing as it unfortunately still happens in most countries.
