Veganism in India

It is estimated that 25% – 35% of Indians are lacto-vegetarian. Still many people in the india do not know the difference between vegan and vegetarian.  But it is changing. Many vegan organizations are making great advances educating people on environmental issues and health conditions such as diabetes and heart disease that used to be very rare in India and are becoming endemic among the middle-upper class. This might be related to the fact, that India is one of the world’s leading dairy consumers.

Traditionally, in India, “pure vegetarian” refers to people who are lacto-vegetarians (they do not eat eggs). Use the term as it’s a great way to explain what you want: just say that you are “pure veg, without any dairy” (ghee, cream, paneer) and everybody should usually understand. Since almost everyone speaks English, at least in the cities, you should have no problem asking. It is very easy to veganize food in medium to large restaurants since the dishes are usually made fresh upon ordering. Making

General tips

Digging into the mouthwatering food is part of the fun while in India, and it’s an experience not to be missed. However, there are a few rules to be mindful of when eating. Be sure the food is thoroughly cooked, and that it hasn’t been sitting out in the open for a long time. Boiling-hot food is best. Avoid fresh produce that may have been washed in unclean water and do not drink tap water or drinks with ice that you suspect have been prepared with non-filtered water. If going for street food, stick to vendors that have lines. Wash hands thoroughly, much more often than you would normally. With these precautions you should be completely fine and, on your way to enjoying one of the best countries in the world for foods.

Vegan food

The cuisine varies from North to South (see LOCAL FOOD page), with the South preparing more coconut based dishes and eating rice as a staple and with the North adding cream for richer dishes and using breads as chapati and naan as staples.

Food is relatively cheap. You will be able to eat the most amazing and intricate dishes for around or even less than $1, particularly on the street. In restaurants, you can order an exquisitely delectable vegetarian thali – a platter offering a variety of Indian dishes (anywhere between 6 and 20) for $2 or even less. In some cases, thalis are refillable at no extra cost. Again, remember to ask for oil as opposed to ghee-based dishes and skip the curd (yogurt) usually served along with your tray.

Many of the Indian dishes are made with clarified butter called ghee. To be on the safe side, always inquire as to whether the dish you’re ordering is made with ghee, and if it is, ask them to substitute vegetable oil instead. People in India will always be happy to cater to that request whenever they can. That being many times waiters will nod their head in agreement, or even say “yes” to your requests, without fully understanding them.

Bhindi Masala

Smoked eggplant curry with masala spices

Baingan Bharta

Indian variation to the Chinese chow mein noodles,cabbage garlic and soya sesame based seasoning

Chow Mein

Spinach curry with choice of potato, mushroom or peas. Make sure: No ghee or paneer is added

Palak

Boiled potatoes (aloo) with cumin (jeera) seeds among other spices

Aloo Jeera

Wheat flatbread filled with lentils, chili and spices

Kachori

Chaat (snack) made of cucumber, tomatoes, coriander, with puffed rice boiled potato and a tamarind chutney drizzled on top

Bhel Puri

Made of mashed potatoes mustard oil, garlic cloves, red chilli and roasted onions. Makes sure: No eggs on top for garnishing

Aloo Bhorta

Lightly fried/baked eggplants with masala spices

Begun Bhaja

Snack made of peanuts/ sesame/ almonds and jaggery (coconut sugar)

Chikki

Candy made of ash gourd or white pumpkin, lime juice and sugar

Petha

Dishes that can be Veganized

Dishes that are not vegan by default, but can be made so, by asking to remove or change part of the ingredients.

Rice with peas, carrots, green beans and cinnamon spices. To Veganize: Ask to have it made with oil and not ghee

Veg Biryani

Chickpea stew with tomatoes, with masala spices. To veganize: ask to be made with oil instead of ghee

Chana Masala

Fermented rice and lentil batter crepe, filled with spiced potatoes, coconut chutney. To veganize: ask for no ghee

Dosa

Wheat dough with choices of veg. fillings. To veganize: ask to be made with oil instead of ghee

Paratha

Potatoes, peppers, cauliflower, green beans,peas, with spices. To veganize: Ask with oil instead of ghee

Veg Bhaji

A stew made of rice, lentils, tomato, onion with turmeric and cumin spices

Khichdi

Dishes that are not vegan, but appear to be

In the city and
on the road

Cows (holy animals in India) wander the city, often skinny and surviving on garbage from the streets. As they eat, they ingest many plastic bags, which can eventually kill them. Bulls pulling carts are commonly used for transportation and carrying loads. In some areas, especially near slums, packs of stray hungry dogs wander the streets. They can be dangerous as a pack, otherwise usually inoffensive.

In the
Countryside

Donkeys carry loads. Bullock carts are common in the villages for personal family use.

General animal welfare issues

Buffaloes and cows are used for agriculture in farming, compost-churning and for producing milk. It is not rare for a farmer to possess a cow and keep it tied up in his yard.

Goats in packs wander the roads. They usually belong to someone, though there is often no one seen watching over them.

Hunting or poaching:

India is losing its majestic wild animals due to hunting and poaching. Poaching of animals like tigers, elephants, rhinos, leopards, snakes, sloth bears, and turtles, for their ivory, horn, teeth, skin and bone. There are a number of wild animals poached for sale on the international markets. Due to heavy hunting for meat and the above, many of the wild birds and animals are on the verge of extinction.

Are unfortunately quite common: Cockfights, Bulbul fights (passerine songbirds) Jallikattu (a kind of rodeo) Races: pigeons, horses, buffaloes, camels Animals chained and forced to dance: bears, cobras, monkeys.
