Dishes that are traditionally served vegan
Traditional stew made with beans, mashed corn, squash, tomatoes, onions and herbs

Dishes that are not vegan by default, but can be made so, by asking to remove or change part of the ingredients.
Lentil and vegetable cream soup usually with cheese/ cream on top. To Veganize: ask for no cream
Half avocado filled with chicken and olives. To Veganize: ask to replace the chicken with veggies, no mayo added
Salad made with cold cooked lentils, spinach, tomatoes, cucumbers, topped with cheese. To Veganize: ask for no cheese
Wheat noodles with tomato sauce and meat. To Veganize: ask for no meat to be added
Quinoa salad made with local seasonal vegetables and usually shrimp. To Veganize: ask for no shrimp

Soup with wheat flour dumplings, will contain dairy or egg
Wheat pasta with tomato sauce, will usually contain milk and butter
Round and flat bread with pumpkin, usually contains animal fat
Chilean country bread, usually made with butter
